My walkman app regularly completely freezes (and does not show any folders) for several hours. After some time, it works again, normally. Turning the device off and on does not help. (In fact, it is at its worst after it has been turned off for the night for charging.)
My phone has the latest update, and I have already set everything back to factory settings, which solved the problem for about a day or two, then it resurfaced, though not quite as badly as before.
I have tried removing newly added apps. This did not help, either.
Is there any way to check what processes are running in the background that maybe shouldn't be? Why does that keep happening?

Try to remove the updates for the walkman app in settings-apps-all.You might have a defective SD card also(if your songs are stored on a SD card).

Yes, the music is on a 64GB SD card. There's not nearly enough space on the phone, I'm afraid. I'll replace the card and see if that will fix the issue. (It seems likely, now, since the phone occasionally had issues accessing the sound files via the ringtone settings, as well.)
