I have a http://vaio.sony.co.uk/view/ShowProduct.action?product=VGN-FZ21S&productFilters=retired&site=voe_en_...
and its resolution is 1280 x 800.
It has the full 1080 sticker on it but how can this be the case when it's really only 800.
I've also heard the HDMI outputs on all laptops will only output 720P.

The 1080 sticker refers to the ability to output 1080i/p through HDMI to an external display capable of displaying 1080p.
You should be able to output 1080p but you may need a graphics driver update if 1080i is the best available.
I agree this is misleading as the screen cannot display more than 800p (all laptop screens are progressive). I understand in France, trading standards have banned the use of the 1080 sticker in these circumstances.
Only the top end models have screen displays 1080 pregressive capable..'tis a bit naughty as the HD market is now practically a monopoly. It was covered at the last conference and correct spec labels will be displayed ...lets hope so.
Interesting, I was sure I read the HDMI's on all laptops are only capable of 720.
